Cassava Chocolate Cup cake recipe

Ingredients
1 3/4 cup Cassava flour
2 cups Sugar
3/4 cup Cocoa Powder
1.5 tsp Baking Powder
1.5 tsp Baking Soda
1 tsp Salt
2 Eggs
1 cup milk
1.5 tbsp White Vinegar
1/2 cup Coconut Oil
2 tsp Vanilla Extract
1 cup Boiling Water
Method
1. Preheat your oven to 170 degree celcius.
2. In a large bowl with a beater, mix all dry ingredients including Cassava flour, Cocoa powder, Baking powder, Baking soda and salt.
3. In a seperate bowl, cream sugar and coconut oil together.
4. Mix the remaining ingredients including eggs, milk, white vinegar and vanilla into sugar/oil mixture.
5. Combine both wet and dry ingredients and mix well with beater.
6. When batter is thoroughly mixed add hot water to the batter and mix well.
7. Pour the batter to muffinn cups in the muffin tray.
8. Bake the cup cakes for 20-25 minutes.
9. Once the cup cakes are done, remove from the oven and put it on the cooling rack.
